INGREDIENTS
10 small fresh red chillies washed and dried well.few sprigs fresh thyme, washed and dried well or 2 to 4 bay leaves washed and dried well.1 clove garlic300 ml extra virgin olive oil
METHOD
thoroughly wash and clean an attractive bottle which can be well sealed.place chillies, garlic and herbs in empty bottle.fill with olive oil and seal well to achieve an airtight seal.stand for at least 2 days to a week before use.makes 300 ml flavoured oil.
INFO & TIPS
If you prefer a milder chilli flavour, remove the seeds from the chillies or once infused to the strength you want can strain out herbs and chillies.
