INGREDIENTS
1 can blueberries or youngberries (410g)
2ml salt
30ml sugar
75g butter
1 ½ cups cake flour
15ml baking powder
1ml vanilla (optional)
1 egg
175ml milk
125ml sugar
METHOD
Drain berries, sprinkle 30ml sugar over.
Cream butter & sugar well. Beat egg, milk & vanilla
together. Add sifted dry ingerdients, liquid & berries
into butter mixture. Stir lightly.
Fill greased or lined muffin pan 2/3 full. Bake @
200*C for 20 minutes or till done.
