INGREDIENTS
1 chicken. Or equivalent weight of fillet
1 Small sachet tomato paste
1 tablespoon red ginger garlic
1 teaspoon crushed garlic
1 teaspoon salt
1&½ teaspoon chilli powder
¼ teaspoon turmeric
1 tablespoon ( steers) mustard
1 teaspoon dhana (dried coriander powder)
1 teaspoon jeeru (cumin) (dried ground cumin)
1- 2 tablespoon lemon juice
A splash of water or oil can be added if the marinade is
too thick
METHOD
Marinate the above for at least an hour and cook
chicken in ghee (Clarified butter) (Clarified butter). Once chicken
cooked lay in oven tray and make the following
sauce.
Sauce:
1 tablespoon olive oil.
Large knob of butter.
1 tablespoon crushed garlic.
1 teaspoon Robertsons peri peri powder.
1 teaspoon crushed red chillie.
1 tablespoon lemon juice.
Dash of Aromat (a South African Spice)
Braise this just so that the garlic cooks abit. Then
pour over chicken. Grill chicken for 10 minutues + till
it seals an browns.
Time varies according to your oven
INFO & TIPS
Fillet steak or T bone can be used in place of chicken
for a variation
