INGREDIENTS
                      Mock Cheesecake (no cream cheese)

1½ packet tennis biscuit
125 g butter 
1 cup fresh cream (250 ml)
1 can condensed milk (375 ml)
Juice of 1½ fresh lemons
                    
METHOD
                      Crush the tennis biscuits until fine like breadcrumbs 
and mix with melted butter to form a base. 
Press into a well greased casserole or dish and leave 
in fridge.
Beat fresh cream with 2 tablespoon icing sugar til soft 
peaks form. 
Mix into condensed milk and add the juice of the 
freshly squeezed lemons. 
And the rind of half a lemon. 
Pour onto base and place back into fridge for about 
30 minutes to allow to set.
Decorate with canned passion fruit / fresh 
strawberries and strawberry jam or with grated 
chocolate.
                    
INFO & TIPS
                       use fresh lemons as the bottled lemon juice
