INGREDIENTS
1 cup flour
2tsps baking powder
2tblsps sugar
2tblsps butter, melted
1 egg
250ml milk
50g dark chocolate, chopped into pieces
To serve:
fresh fruit, like strawberries, blueberries,
raspberries, sliced banana
golden syrup, maple syrup or chocolate syrup
freshly whipped cream
pecan nuts, optional
METHOD
Sift dry ingredients into a bowl, stir in
sugar.
In a separate bowl, beat milk, egg and melted
butter until foamy. Make a well in the center
of the dry ingredients and slowly beat in the
milk mixture. Blend until mixture is smooth.
Allow batter to rest for 30 minutes. Stir in
chopped chocolate. Do not over handle batter.
Spray pan with non stick spray and place on
medium heat. Drop spoonfuls of dough and fry
until the top begins to bubble. Flip over and
fry other side till lightly browned.
Cover with paper towels until all pancakes /
flapjacks are cooked. Dough yields 20 small
flapjacks or 5-6 large ones.
Serve with dollops of fresh cream, dribbles
of syrup, sprinkles of nuts and loads of
fruit!
