200g raspberries or strawberries( fresh or frozen) 250 ml fresh cream x2 1 tub cream cheese 2 slabs white chocolate( dream) 1 cup castor sugar ( half for strawberry coulis and half for terrine)
Step 1 Make coulis by putting strawberries and sugar in a sauce pan cover and gently heat, stirring at times. Reduce strawberries and blend into a smooth puree. Leave aside to cool.
Step 2 Melt the white chocolate and allow to cool. Beat the cream cheese with the sugar and leave aside. Beat the fresh cream till stiff, fold in the white chocolate and cream cheese and fold in till everything is well mixed.
Step 3 Line a round cheese cake pan with glad wrap anf pour half the terrine then pour over the coulis then the remaining terrine and put in the freezer over night. Take it out 20 minutes before serving allow to thaw. Deco with cream and strawberries and enjoy on a hot summers weekend😋
