2kg cleaned medium orange crab
2 finely sliced onions
1⁄4 cup oil
6 teaspoon ginger and garlic
1 teaspoon tumeric
6 teaspoon salt
6 teaspoon kashmiri chilli powder
2 teaspoon crushed chillis
4 teaspoon kashmiri mixed masala
4 tablespoon brown tamarind
Dry roast in a frying pan for 1-2 minutes:
2 tablespoon mustard seeds,
2 tablespoon whole black pepper,
2 tablespoon whole jeera and
1 tablespoon mustard seeds, over medium heat as seeds burn easily. Grind in a mortar and pestle till fine. 8 medium red tomatoes blended with a few green chillis( chillis are optional)
1 large tin tomato puree
4 sprigs curry leaves
half bunch coriander
Fry onions in oil. Add crab pieces, salt, tumeric and ginger and garlic.Cook for 10 minutes till water dries.
Add kashmiri chilli powder, kashmiri mixed masala,crushed chillis, powdered seeds and curry leaves to crab.Braise for a few minutes till masalas are well coated on the meat.
Add 4 tablespoon brown tamarind diluted in half cup of hot water to curry.(remove seeds) Add tomatoes and tomato puree.
Mix well.Add 1-2 cups of water and allow curry to cook for 20 to 30 minutes till a thick gravy is formed.Garnish with curry leaves, green chillis and chopped coriander .
