INGREDIENTS
2 ½ cups flour
1 teaspoon baking powder
1 teaspoon salt
2 tablespoon cocoa
4 tablespoon red food colouring
125g butter
1 ½ cups caster sugar
2 xl eggs
1 teaspoon vanilla essence
1 cup buttermilk
1 teaspoon vinegar
1 teaspoon bicarbonate of soda
METHOD
Preheat oven to 180.
Sift flour, baking powder & salt.
Combine cocoa & food colouring into a paste.
Cream butter & sugar until light & fluffy.
Beat in eggs, one at a time.
Add vanilla & the paste of cocoa & colouring.
Add flour a little at a time alternating with the buttermilk.
Mix vinegar with bicarb & as it fizzes, stir into batter.
Pour mixture into mould & bake for 30-35 minutes or until a skewer comes out dry when it pierces the cake.
Remove from oven, cool & decorate as desired

Cream cheese topping:
1 tub cream cheese
125 gr butter
2 cups icing sugar
1 tsp vanilla essence
Beat all together till well combined. Chill in fridge 20 mins before using. Decorate as desired.
Perfect recipe for cuppies. Obviously you will need to reduce baking times
