INGREDIENTS
½ onion chopped
2 chicken fillets cubed
salt and pepper to taste
½ teaspoon ginger
red chillies to taste
dash cinnamon and nutmeg
1 packet knorr thick vegetable soup or any veg soup
¼ cup flour
2 cups milk
2 cups cooked butternut mashed/pureed
½ cup fresh cream (optional)
METHOD
Braise onion till it changes colour. Add cubed fillets and spices. Braise.
mix milk and flour till smooth. Add to pot and cook on low heat while stirring until it thickens and begins to boil.
add in veg soup mixed with water and simmer for ten minutes.
add in pureed butternut and simmer till well mixed about 20 minutes.
before serving add cream and heat through so well mixed.
garnish with greens.
serve with croutons
