INGREDIENTS
2 cups sugar (I use brown sugar, it's not so
sweet)
2 eggs
½ cup oil
½ cup milk
1 cup hot water
1 cup mashed banana (very ripe bananas work
best with this recipe)
10ml vanilla essence
1 ¾ cup cake flour
¾ cup cocoa
1 ½ teaspoon baking powder
1 ½ teaspoon bicarbonate of soda
¼ teaspoon salt
METHOD
I love making this cake because it's as easy
as A, B, C! It's versatile too, you can make
cuppie cakes, use the dough in a bunt tin or
the traditional round cake. It's melt in the
mouth chocolatey with a slight hint of banana
and the kids will love it!
Add the first seven ingredients to a bowl or
large jug and beat with a hand mixer thoroughly.
Sift all dry ingredients together. Make a
well in the center and slowly pour in the
liquid while mixing through until just
incorporated. For cuppies bake for 10-12
minutes, for a bunt / round tin bake for
25-30 minutes or until a skewer poked in the
center comes out clean.
Allow cake to cool completely and decorate
with choc ganache or butter cream icing or
stiffly whipped cream and caramel, the
possibilities are endless! YUMS!
