Red velvet cupcakes
2 ½ cups cake flour
2 tablespoon cocoa
1 teaspoon salt
1 ½ cups sugar
1 ½ cups oil
2 xl eggs
1 teaspoon vanilla essence
1 cup buttermilk
1 ½ teaspoon baking soda
2 teaspoon vinegar
Preheat oven and line cupcake pans with paper liners
Sift cake flour, cocoa and salt and set aside.
With an electric mixer on medium high whisk sugar and oil till combined.
Add eggs one at a time beating till each is incorporated, scraping the sides of bowl as needed. Mix in colour and vanilla.
Reduce speed to low; add in flour mixture in 3 batches alternating with buttermilk. Whisking well after each.
In a bowl mix baking soda and vinegar (It will foam). Add mixture to batter and mix on medium speed for 10 sec.
Divide batter in cupcake pans. Bake at 180° for 20min.
Decor with cream cheese icing
¼ lb butter beat till white then add 1 tub of cream cheese and icing sugar as needed
