Whichever veggies you like eg: butternut, pumpkin, sweet potatoes, peppers,sweetcorn etc, all cut thickly
. Marinade: ¼ cup olive oil.
2 tablespoon sweet chillie sauce.
1 teaspoon fine Jeeru (Cumin). 1 teaspoon crushed garlic.
1 teaspoon fine black pepper
. + - 1 teaspoon salt. (In place if salt and pepper u can use the inner parmens sea salt...).
Marinate veggies in marinade then roast in oven.only sweetcorn and gem squash must be boiled a little.
Once veggies are tender add boiled sweet corn.don't cover veggies whn roasting,just roast on200deg and keep turning,until cooked and crisp.
Sauce::: 250ml Fresh cream. 2 tablespoon mustard sauce. 1 tin creamstyle corn. Chopped dhania (coriander). Chopped spring onions(if one has) Once veggies are roasted pour sauce over and cover with foil and heat for about 20min, must still be creamy when dishing out. Also optional to put cheese
