INGREDIENTS
¼ lb. butter/margarine
1 ⅓ cup white sugar
1 teaspoon vanilla essence
2 eggs (slightly beaten)
4 bananas smashed(you can use overipe
bananas)
2 cups sifted flour
1 teaspoon baking powder
1 teaspoon bicarb
125 ml boiling water
1 teaspoon. Cinnamon powder
Chopped pecans
METHOD
Cream butter/margarine and sugar.
Add vanilla, beaten eggs and mashed
bananas. Beat together till just
combined.
Add sifted flour and baking powder.
Dissolve the bicarb in the water, add it
to the above mixture and mix well.
Add cinnamon or nuts (optional).
Make a loaf cake or cupcakes- bake at
180 degrees until done.
