INGREDIENTS
125g margarine. 125ml sugar
1 egg yolk. 315ml cake flour
2ml baking powder. 25ml custard powder
Topping
100ml soft brown sugar
30ml golden syrup. 100g margarine
125ml roasted unsalted peanuts
METHOD
1. Beat butter and sugar together. Add egg yolks and mix until light and fluffy
2. Add dry ingredients and mix to form a stiff dough
3. Press mixture into a well greased rectangular tin
4. Bake in a preheated oven @180' for 20-25 minutes or until golden brown
5. Topping
Place brown sugar, golden syrup and margarine in a saucepan. Stir over low heat until marg has melted and sugar has dissolved. Simmer gently for 5 minutes. Stir in roughly chopped nuts
7. Remove from oven spread with prepared topping mixture and return to the oven for further 5 minutes. Leave to cool in tin then cut into squares. Store in an air tight container
