INGREDIENTS
125g self raising flour
½ teaspoon baking powder
70g caster sugar
85g blueberries
2 teaspoon vanilla
1 egg
125ml buttermilk
2 tablespoon oil
Sugar for dusting
METHOD
1. Preheat oven to 190'. Line muffin tins with baking paper cut paper into squares and crossing the squares so they fit the tin
2. Sift the flour and baking powder into a mixing bowl. Stir in the sughar and blueberries.
3. In a seperate mixing bowl beat together the vanilla,egg, buttermilk and oil with a frok until evenly combined
4. Tip the buttermilk mixture into the flour using a dessertspoon gently fold the ingredients together until only justb mixed (don't over blend the ingredients or the muffins won't be as light
5. Fill the mixture in the lined muffin cases it should be in line with the tin sprinkle sugar on top bake for 15min until firm on the touch
