Fruit Cake

INGREDIENTS

1½ cups dried mixed fruit
½ cup mixed peel
150g butter
½ cup brown sugar
1 teaspoon ground mixed spice
1 cup orange juice
2 eggs
1¾ cups flour
3 tspns baking powder

METHOD

Place mixed fruit, mixed peel, butter, brown sugar, mixed spice & orange juice in a saucepan large enough to mix all the ingredients. Heat, stirring until boiling. Boil for 4 minutes. Leave to cool. Using a wooden spoon, beat in eggs, flour & baking powder until combined. Spoon into a baking paper-lined round cake tin or square tin. Bake at 150 degrees for 1 to 1¼ hours or until skewer comes out clean. Leave in tin for 10 minutes before turning on to a cooling rack. Enjoy !!!
