1 box mint Romany creams Butter 500ml fresh cream 180g dairymilk 90g dark chocolate ( Albany ) / baking dark chocolate ) 3 eggs - separated Peppermint chocolate or anything of your choice to garnish
crush biscuits in a machine add the melted butter as required to make a crust , add to a Pyrex or Perspex and press it down .
Beat fresh cream until stiff Melt the chocolates together with some oil add the yolk to chocolate and beat until stiff and mixed in , whip the egg white until stiff and white and fold into chocolate . Add chocolate mixture to cream and mix well . Garnish grated aero mint or peppermint crisp ontop .
