Stuffed Jacket Potatoes

Stuffed Potatoe Jackets
8 potatoes. Scrub potatoes. Boil with skin til tender. cool....cut in half, scoop flesh out taking care not to tear pocket. Keep jackets aside. Mash potatoes Braise 1 cubed onion in butter till transparent add 1 punnet finely chopped mushroom 1 green pepper salt to taste 1 teaspoon pepper 1 teaspoon crushed red chillies stirfry til soft. Remove & add to mash.
Add ¼ cup mayo 3 tablespoon nandos peri peri chopped dhania (coriander) & spring onions to the mash & mix. Fill the potatoe shells with mash top with cheese sprinkle with dries paresly & bake in oven til cheese melts. (Optional add ¼ cup creamstyle sweetcorn )These potatoes jackets are perfect 4 braais. Makes a wonderful side dish for any meat,chicken or fish dish.
