INGREDIENTS
Frozen mixed berries ( around 400 -500
gms)
Mixed fresh berries ( blackberries,
raspberries, strawberries , blue berries
) - if using fresh berries then cut
strawberries , leave the other berries
whole
Madeira cake , sliced
Fresh cream 250 mls
Custard about 500 mls
Caramel treat ½ tin
METHOD
Method : put the berries in a bowl with
a little bit of water & castor sugar (
if using frozen put the sugar & water
when it's slightly defrosted & then
allow to thaw completely) mix well
Beat cream till thick
Add caramel treat & beat a little more
Add the custard & mix well. Taste for
sweetness ( you may need to add a little
custard)
In a bowl line the cake slices
Soak with a little of the syrup of the
berries
Pour the custard cream mixture , then
the fruit
Then another layer of cake , custard
mixture & fruit
Carry on till all is used up
Chill & serve
