INGREDIENTS
1 cup sugar
1 cup peanuts skin removed
½ cup sesame seeds
2 teaspoon ghee (Clarified butter)
Pinch baking soda
METHOD
METHOD
1) heat a thick based pan add sesame seeds and dry roast on medum heat till they splutter remove and keep aside
2) to the same pan add teaspoon of ghee (Clarified butter) and add nuts for about a minute or 2 This will enchance the taste of the nuts remove and keep aside with sesame seeds
3) grease foil with little ghee (Clarified butter) grease also a rolling pin with ghee (Clarified butter) which you will use to flatten the brittle
4) add a teaspoon of ghee (Clarified butter) to the same pan rotate the pan with ghee (Clarified butter) so ghee (Clarified butter) gets coated to the pan add sugar spread and add 2 teaspoon of water
5) keep the heat high and keep stirring when sugar starts melting reduce heat to low once sugar melts it starts changing colour
6) keep stirring continuely sugar syrup will change colour to light brown
7) switch off stove and immediately add pinch of soda and roasted nuts and seeds
8) mix till nuts and seeds well coated pour on the greased foil and flatten using greased rolling pin
9) when it is warm draw lines according to desired shape once cool cut and store in air tight container or glass jars
