: Sift 2 cups flour and 1 teaspoon baking powder together
250ml ice cold water mixed with 1 teaspoon lemon
3-4 tablespoon thick cream (I used creme fresh as I didn't have cream. the woolies double thick cream is perfect).
mix the cream with the dry ingredients to form "breadcrums". add the water a little at a time to make a stiff dough. I made 10 balls and rolled each into circles. brushed each circle with melted ghee (Clarified butter) and sprinkled with sifted maizena (corn flour). stacked up and made one pile and rolled into a BIG roti. Smeared the top with ghee (Clarified butter) and sprinkled with maizena (corn flour). rolled up like a swiss roll and cut circles about as thick as my thumb. rolled out and fried in hot oil.
Syrup: 1 cup sugar, 1⁄2 cup water and few drops rose essence. Boil together for a few minutes. drizzle over cooled, drained puris.
In this picture I didn't yet drizzle with the syrup as it must stand overnight on paper towel to drain all the oil.
