INGREDIENTS
1 large fish fillet
lemon juice
salt
4 tablespoon. cake flour
1 teaspoon lemon juice
½ to 1 teaspoon baking powder
water to prepare a thick dough
oil to deep fry
lettuce leafs washed and cleaned
chilli powder to sprinkle
I bread roll
METHOD
cut your fish fillet into finger thick strips and approx. the length of our middle finger (coujons ) marinate in lemon juice salt . make a batter with cake flour, salt and water adding 1 teaspoon of the lemon juice , now add ½ teaspoon of the baking powder and put a little blob in the heated oil and see if the blob rises. if not add a bit more until its perfect . oil should be medium hot . do not add a lot of baking powder or the batter will suck the oil .
now immerse your coujons in the batter and deep fry on medium heat till golden and crisp. heat must be medium otherwise the fish will not crispen but be soggy. once fried sprinkle chilli powder on the fish
lay lettuce in your roll ,top with fish and serve immediately
