INGREDIENTS
Dough:
2 Cup flour
1/4 teaspoon salt
2 teaspoon baking pd
125gr butter
1 Cup cold milk
Place dry ingredients in a bowl, add butter and rub until it resembles breadcrumbs. Add milk to from a soft dough. Roll the dough out thin and cut into rounds using a cutter. Place in greased muffin pan and bake till firm but not brown. Set aside to cool.
Filling:
2cups cubed chicken
1 onion chopped
1 teaspoon crushed garlic
100g butter
1 punnet mushrooms
1 Cup diced peppers
Green chillies to taste
3 teaspoon Aromat (a South African Spice)
1/2 teaspoon black pepper
250ml fresh cream
3Tbls maizena (corn flour)
215g sweetcorn
2tbls mayonnaise
METHOD
Saute onions and mushrooms in butter til soft. Add chicken and stir fry for a few minutes. Add pepper and spices. Mix maizena (corn flour) into the cream and pour into the chicken. Remove from heat and add sweetcorn and mayo. Spoon filling into cups and sprinkle cheese. Ready to freeze at this stage or bake at 180 deg. til the cheese melts.
