INGREDIENTS
1 kg lamb ribsSalt & pepper to taste1 ½ teaspoon ginger garlic paste
For the marinade:1 teaspoon salt1 ½ - 2 teaspoon red chilli powder1 tablespoon Garlic Paste2 tablespoon tomato sauce2 tablespoon Mrs Balls Chilli Chutney5 tablespoon Worcester Sauce2 tablespoon Vital Thick Sweet & Sour Soy Sauce¼ cup white vinegar¼ cup lemon juice4 - 5 tablespoon brown sugar
Creamy Mash Potatoes6 - 8 large potatoesSalt and pepper to taste250ml fresh cream2 tablespoon butter
METHOD
Rinse off ribs, and place in a pot with salt, fine pepper and ginger garlic paste
Cover ribs with water and set to boil
Boil until ribs are tender and soft
In a mixing bowl combine all ingredients for the marinade and mix well
Remove ribs from water once soft, and arrange in oven pan
Pour the marinade over, ensuring all the ribs are nicely coated
Bake on high for 15 - 20 minutes, turning occasionally so that the whole rib browns nicely
Method for mash:
Boil potatoes until soft.
In a saucepan, heat cream & Butter until butter is just melted (do not boil)
Season cream mixture with salt & Pepper
Mash potatoes and add in cream mixture
Whisk until well incorporated
Check seasoning, and add more pepper if necessary
