INGREDIENTS
185g butter
¾ cup castor sugar
1 teaspoon vanilla essence
2 egg yolks
½ cup ground almond powder
1 ½ cups flour
½ teaspoon baking powder
Apricot/Strawberry jam
METHOD
Preheat oven to 160 degrees. Beat butter, sugar, eggs and essence until combined. Stir in the dry ingredients and mix well until it forms a dough. Make small balls and place on a greased baking tray. Press a hollow in the centre of each biscuit with your finger and spoon a teaspoon of jam into it. Bake for about 25 minutes.
