INGREDIENTS
125 g butter
½ cup castor sugar
1 egg
1 teaspoon vanilla essence
+/- 2 cups flour
2 teaspoon baking powder
Apricot jam
Icing sugar to dust
METHOD
Preheat oven to 180°c.
Cream butter and sugar until light and fluffy.
Add in egg and vanilla essence. Beat well.
Sift dry ingredients and add to butter mixture.
Knead to form a soft dough but it shouldn't be sticky.
Press half the dough into a greased baking sheet. Should be a thin layer. Spread a nice layer of jam over the dough. Coarsely grate the other half of the dough evenly over.
Bake for +/- 20 minutes until golden.
Cut into squares or fingers while hot.
Allow to cool in pan then dust with icing sugar.
