2 cups cake flour
1 teaspoon bicarbonate soda
2 teaspoon baking powder
1 teaspoon salt
3 teaspoon cinnamon powder
4 large eggs
1 1⁄4 cup oil
2 cups castor sugar
3 cups grated carrot
1 cup peacan nut ( chopped)
Preheat the oven to 180 degrees
In a mixture beat together the eggs and sugar until fluffy , add the oil and beat until mixed in .
In a bowl sift together all the dry ingredients and add this to the egg mixture and mix well . Lastly add the grated carrots as well as the chopped peacan nuts and mix that in evenly . ( if you find the batter abit thick add alittle water)
Grease a baking tray round or square add batter and bake until done . Aprox 30minutes
1 tub cream cheese
1 /2 to 1 cup icing sugar add more if you want it sweeter .
Beat butter and sugar until fluffly add the soften cream cheese and beat for another 2 minutes until smooth
Decorate with peacans .
