INGREDIENTS
2 eggplant chopped into small squares
2 teaspoon crushed garlic
2 tablespoon chopped parsley
¼ cup lemon juice
½ cup yogurt
sesame sauce (if available)
fried squares of pita or arabic bread
METHOD
Deep fry the egg plant until cooked or slightly crispy
Place in serving dish and mix in 1tbl chopped parsely, 1 tablespoon lemon juice and 1 teaspoon garlic
Sauce
Mix 2 tablespoon sesame sauce (if avaiable) with 5 tablespoon yogurt and 1 teaspoon garlic and remainder of lemon juice.
Pour sauce over egg plant
Decorate with bread crisps
