Cake: 1 1⁄2 cups flour 4 teaspoon baking powder rind of one large lemon 1⁄2 cup water 1⁄2 cup oil 1 cup sugar 4 eggs 1 teaspoon vanilla essence
Lemon glaze icing: 2 tablespoon melted butter 1 cup icing sugar ½ teaspoon lemon rind 1-2 tablespoon freshly squeezed lemon juice
Beat oil, water and sugar well. Add one egg at a time and beat well. Add in vanilla essence and lemon rind. Sift dry ingredients and add to above. beat well. Place into 2 greased cake pans. Bake at 200°c for +/- 20 minutes. Remove & cool.
Stir together butter, lemon rind and icing sugar in a small bowl. Add in lemon juice and stir until glaze is smooth and can be drizzled easily. Zaakirah
