
Cucumber Mint Salad

1 cucumber
Cut in half length wards, scoop out seeds with spoon, slice.
Put in colander with ±1 teaspoon salt. Allow all water to drain out
1 red onion
Quartered and sliced. Place in a bowl of cold water and soak for 10 minutes. Drain
Handful mint leaves roughly chopped
Mix all together
Season with black pepper, 2 teaspoon sugar, black vinegar and a dash of olive oil. Leave to marinate atleast 20 minutes before serving.serve cold
