INGREDIENTS
Potato Salad

Ingredients:4 large potatoes1 medium onion (chopped)2 green chillies (thickly sliced)Coriander (chopped)Chives (chopped)1 teaspoon dhana jeeroo (coriander cumin) powder1 teaspoon salt½ teaspoon white pepper½ teaspoon dried mixed herbsCross & Blackwell/ or Nola mayonnaiseFreshly cracked black pepper(Optional, ground garlic + diced boiled egg)
METHOD
1. Wash potatoes, randomly poke all over with a knife. Cover in kitchen paper and place in microwave with lid over. 2. Bake potatoes in microwave for 5-7min until potatoes are tender, or when skewered, knife slides through easily. 3. Peel potatoes and roughly chop up. 4. In a dish mix fresh greens, spices, onions and mayo. 5. Add potatoes and toss, adding more mayo to dress well. Garnish with black pepper. 6. Leave in fridge and serve chilled.
Note: •May add chopped boiled eggs to salad. •Make sure to slice chillies thick so it's visible when eating.•Make sure the potato salad is well dressed with mayo, as it sits it dries a little. If leaving in the fridge for a while until needed, maybe add 1-2 tablespoon more mayo before serving.
