INGREDIENTS
Pastry:
250g cottage cheese
125g grated butter
2 cups flour
½ cup self raising flour
1 teaspoon baking powder
½ teaspoon salt
Process cottage cheese and butter till creamy
Sift in dry ingredients
Mix until a smooth dough,knead well
Place in a plastic and chill for 45 minutes
FILLING
1 medium onion chopped
1 teaspoon whole Jeeru (Cumin)
ghee (Clarified butter)
Saute onion with Jeeru (Cumin) in ghee (Clarified butter) then add
2 cups cubed chicken fillet
2 teaspoon lemon juice
Salt
1 teaspoon pepper
1 teaspoon crushed green chillies
1 teaspoon dhana Jeeru (Cumin)
1 teaspoon chicken/peri peri spice
Cook till chicken is done then add
1 large bunch finely chopped spinach
Cook till water evaporates,then add 1 cup fresh cream
Boil till thickens,add salt and pepper to taste
Leave to cool,when cool,add 1 cup grated cheese and 2 cakes feta crumbled
METHOD
Roll out pastry and cut in squares
Place filling in middle,close over and press edges with a fork..glaze with beaten egg,sprinkle with sesame seeds or parsley
Bake in a preaheated oven on 180 till golden
