INGREDIENTS
1 pack fettucine or tagliatelle, cooked and
drained
olive oil
4 cloves garlic, crushed
1 butternut, peeled and cubed
1 punnet mushrooms, cut in half
1 pack baby marrow, cut into chunks
1 pack baby sweetcorn, cut into chunks
1 green pepper cut into chunks
1 red pepper cut into chunks
1 red pepper cut into chunks
Garlic and herb seasoning to taste
METHOD
Place all the vegetables in a roasting pan.
Rub with garlic and drizzle with olive oil.
Bake at 200C for about 30 minutes.
In a large oven proof dish combine pasta with
vegetables. Drizzle with some olive oil.
Season well with garlic and herb seasoning.
Return to oven for about 15 minutes to heat
through.
Serve with garlic bread or tramezzini!
As a variation, add cooked chicken strips or cooked
mince to pasta before placing in the oven for the
second time.
INFO & TIPS
Fettucine and tagliatelle is the ribbon-like pasta found at most supermarkets. The spinach is realllllllllyyyyy good!
