INGREDIENTS
1 leg mutton
1 tablespoon freshly grated or finely chopped garlic
1 teaspoon ginger
1 teaspoon ground green chilli
1 teaspoon red chilli paste
1 tablespoon gorimas BBQ spice
1 teaspoon gorimas pepper steak spice
1 tablespoon dhana powder
2 tablespoon vinegar
Marinade over night
Sauce :
¼ cup steers monkey gland sauce
1 tablespoon steers peri sauce
1 tablespoon Nandos Wild herb sauce
1 tablespoon Nandos garlic sauce
1 tablespoon Worcester sauce
1 tablespoon mayo
2 tablespoon tomato sauce
1 small piece butter
Handful spring onions
Dash water .
METHOD
Cook the leg in a pot with ghee (Clarified butter) or butter on low until completely cooked , add water about 3 cups and cook until tender . Add more water if necessary .
Mix all the sauces together with the water add this to the cooked leg , simmer for 1 minute and serve immediately
