SCOTCH CRUMPETS
2 tablespoon maizena (corn flour)
6 tablespoon cake flour
2 tablespoon oil
1 egg (beaten)
½ teaspoon salt
1 and half teaspoon baking powder
3 tablespoon sugar
½ cup milk
Seive togethe the dry ingrediants but not the sugar. Add all the other ingrediants and beat well. Heat a griddle well. Grease it lightly, then drop spoonsful, the size of crumpets. When bubbles appear then turn around and brown on the other side. Keep covered with kitchen towel till all are made. Top with golden syrup and dessicated coconut
