INGREDIENTS
5 medium pieces Baby hake fillets (skinned,washed)
Garlic cloves peeled (as many as you like)
Herbs of your choice,fresh (parsley,dill)
Lemon zest (as much as you like)
3-4 slices bread (stale bread is good to use)
1 cup flour seasoned with salt and black pepper
1x XL egg (beat with 1 tb water and 1 tb mayonaise or mustard sauce)
METHOD
Chop bread. Place chopped bread,garlic cloves,lemon zest and herbs in a food processor. Blend till mixture becomes crumbly. Empty crumbs in a dish or bowl
Dredge hake fillets in seasoned flour mix
Then dredge in egg wash and finally crumbs
Grease a baking tray if using and
Bake in a hot oven at 180 for 20-25 minutes or until done. Or fry till golden brown,drain on absorbent paper
Serve hot as desired. I served mines with chips,lemon wedges and coleslaw!
INFO & TIPS
Experiment with different falours for the crumb mixture. You could try black pepper and lemon,or red chilli and garlic..
