INGREDIENTS
1kg chicken fillet ( if you have chicken mince you dnt need to use fillet
1 tablespoon garlic
1 teaspoon ginger
1 tablespoon red chilli paste
1 tablespoon soya sauce
1 teaspoon lemon pepper
1 teaspoon black pepper
½ teaspoon Aromat (a South African Spice)
1 tablespoon chicken spice
2 tablespoon lemon juice freshly squeezed
salt to taste
½ cup bread crumbs
1 onion chopped
1 red pepper chopped
handful spring onions
handful chopped mint ( optional )
sauce :
sesame oil / veg oil
1 tablespoon freshly grated ginger
1 teaspoon red chilli paste
¼ cup soya sauce
1 tablespoon Worcester
2 tablespoon vinegar
1 tablespoon sesame seeds
METHOD
cut chicken into chunky cubes to fit in a food processor , add all the spices to chicken .
chop all veggies chunky , place in food processor and give it a blitz , remove.
place chicken in food processor and mince it . add the blitz veggies and give it 1 more mix .
add ½ cup bread crumbs ( not the cornflakes 1 , the bread 1 , if you do not have take 2 slices bread place in processor and blitz) add this to meat ball mixture and combine .
Add a good amount of oil in a pan big enough to fit approx 20 to 24 . add meatballs to pan and cook on low , turn them around cook evenly .
for the sauce ;
add the oil , grated ginger and red chilli saute add the sauces , simmer , add sesame seeds and pour over meatballs
serve with kung pao spagetti , pita or roti
