INGREDIENTS
¾ cup sugar
¼ lb butter
2 eggs
1 teaspoon peppermint essence
¾ cups dessicated coconut
¾ cups milk (fold in)
Green colouring
1 & ½ cups flour
1 teaspoon baking powder
METHOD
Cream the butter and sugar. Add the eggs, beat. Add the peppermint essence, coconut and few drops of colouring. Mix in then add the flour and baking powder. Lastly, fold in the milk. Bake at 180C until done. Decorate with melted peppermint chocolate and mint leaves.
