INGREDIENTS
1 cup sugar
1 egg
1 tablespoon apricot jam
1 cup flour
1 teaspoon bicarb
1 teaspoon baking powder
1 teaspoon vinegar
1 cup milk
1 teaspoon vanilla
SYRUP::
3 tablespoon butter
1β2 cup sugar
1 cup milk
1β2 cup water
1 teaspoon vanilla essence
METHOD
1.Beat eggs,sugar and jam till white
2. Combine with the rest of ingredients and mix till a smooth batter is formed.
3. Pour in a greased pyrex 30x 20cm
4. Bake @ 180 DEGREES till it gets brown
Bake approximately 30 to 35 minutes
Boil all the syrup ingredients while pudding is baking
Once pudding is baked poke with a toothpick as soon as it cums out of the oven and pour all the syrup over!
Serve with ice cream,custard or cream..
