INGREDIENTS
Chicken
Ground green chillies
Light soya sauce
Black pepper
Shan chowmein spice
1 carrot
Green pepper
Red pepper
Cabbage
1 clove garlic
Egg noodles
METHOD
Take about 500g chicken and cube or strip into small pieces. Add ground green chillies, pepper and 2 tablespoon light soya sauce. Cook on high in 3 tablespoon butter for a few minutes. Add about a tablespoon or 2 tablespoon of shan chowmein spice (keep checking salt before adding more)Set chicken aside.
Julienne 1 carrot into match stick size. Julienne half green pepper and half red pepper. Shred quarter cabbage.
In the same pot the chicken was cooked, add a bit more butter to the remaining butter in the pot. Chop 1 garlic clove and add to the butter. Let it heat a bit.Then add all your veggies and stir fry till tender. Add about a tablespoon more of light soya in the veg. Then mix in the chicken.
Boil egg noodles.Drain and combine into chicken and veg mixture. Let it heat nicely tossing in between. (Adjust soya sauce according to taste)

NB. The soya sauce that you use makes a big difference.
I prefer using a light one.
Also be careful as soya sauce is very salty and the shan spice has salt already. (I never added any salt)
