Ingredients: Butternut- 500g packet butternut cubes 1 tablespoon rough red chillies 1 teaspoon salt ½ teaspoon dhana Jeeru (Cumin) ½ teaspoon lemon pepper 2 tablespoon butter
Spinach- 1 onion (sliced) 500g packet cut spinach 1 teaspoon white pepper 1 tablespoon ground garlic ½- 1 teaspoon salt ½ cup fresh cream.
BUTTERNUT: Snip corner of packet of butternut and place on plate. Microwave till steamed and tender. Remove from packet into a bowl. Add butter and spices and mix in. May mash up or leave chunky or make into smaller chunks. Reheat before serving.
SPINACH: saute onion, add garlic and spinach. Wilt spinach down with a little water then add spices and fresh cream. Reduce till thickened. May add crumbled feta cheese in.
