INGREDIENTS
Swedish Shortbread

250 gr butter
2/3 cup icing sugar, sifted
1 teaspoon vanilla essence
½ cup mazeina
2½ cup flour
METHOD
Beat butter and icing sugar till very fluffy and white.
Add in rest of the ingredients and form into a dough.
pat into a 30x25cm Swiss roll pan.
Cut into fingers poke with a fork and bake at 160deg for about 30 minutes ..remove from oven sprinkle castor sugar lightly over and return to oven for another 5 minutes.
While still warm cut along lines again to separate..
