INGREDIENTS
1 avo gently skinned, halved & brushed with lemon juice
Slice tomato, red onion, baby spinach & lettuce
Layer above on bottom half of avo
1 piece chicken fillet
1 egg lightly beaten
Add: chicken spice, salt pepper, crushed green chilli & paprika
METHOD
Mix & dip fillet into egg mixture. Then coat in panko crumbs. Fry in coconut oil till golden brown & cooked through
Cool & layer onto avo
Mix 2 tablespoon of mayonnaise with 1 teaspoon of Sriracha sauce. Drizzle generously over the chicken. Close thither second half of avo.
Top with sesame seeds, onion seeds & a sprinkling of sumac
Enjoy!
