INGREDIENTS
¾ cup brown nutty wheat or wholewheat flour
¾ cup white plain flour
1 tablespoon brown sugar
1 tablespoon white sugar
1 tablespoon baking powder
½ teaspoon ground cinnamon
¾ teaspoon salt
1 egg
300ml milk
1 & ½ teaspoon vanilla extract
4 tablespoon melted butter
METHOD
Combine dry ingredients in a bowl and make a well in the centre. Heat the milk until it's lukewarm then add the rest of the wet ingredients and beat with a fork. Pour in the centre of the dry ingredients and slowly whisk until combined. Heat a pan and spread olive oil. Pour spoonfuls of batter, let brown on one side and turn over and cook the other side. Serve immediately with seasonal fruit and honey.
