1 cup boiling water
1 and quarter cup chopped dates
1 teaspoon bicarb
Pour boiling water over chopped dates and bicarb and leave aside for 15 minutes
125g butter
1 cup castor sugar
Cream well together
Add
2 eggs
1 and half cups flour
1 teaspoon baking powder
Half cup chopped pecan nuts
Add date mixture and mix well
Add to greased pan.bake at 180 for approx 45 minutes
FUDGE TOPPING:
1 cup dark brown sugar
1 cup fresh cream
2 tablespoon butter
Cook on medium heat for 6-8 minutes
Pour topping over cake and sprinkle top with nuts.
