INGREDIENTS 1 cup ordinary sugar 1 extra large egg 1 tablespoon apricot jam 1 cup cake flour 1 teaspoon bicarbonate of soda 1 teaspoon baking powder 1 teaspoon white vinegar 1 cup full cream milk 1 teaspoon vanilla essence
Sauce: 3 tablespoon butter 1⁄2 cup ordinary sugar 1 cup Ideal milk 1⁄2 cup water 1 teaspoon vanilla essence
Beat eggs,sugar and jam till white and fluffy. combine with the remainder ingredients and mix till a smooth batter is formed. Pour in a greased pyrex 25cm x 25cm and bake @ 180 C till golden for +/-30 minutes
Boil sauce ingredients till very slightly thickened. When pudding is baked, whilst hot poke with fork randomly all over and pour sauce over. Serve with ice cream or vanilla custard.
