1 cup ordinary sugar1 extra large egg2 tablespoon apricot jam1 cup cake flour1 teaspoon bicarbonate of soda1 teaspoon baking powder1 teaspoon white vinegar1 cup full cream milk1 teaspoon vanilla essence
Sauce:4 tablespoon butter1⁄2 cup brown sugar1 cup Ideal milk OR fresh cream1⁄2 cup milk1 teaspoon vanilla essence
1. Beat eggs, sugar and jam till white and fluffy.2. Combine with the remainder ingredients and mix till a smooth batter is formed.3. Pour in a greased pyrex 25cm x 25cm and bake in preheated oven at 180degC till golden for +/-30 minutes.4. About 10min before pudding is done, in a saucepan, melt butter on medium heat.5. Add sugar and milk, mix in. Stir for a minute.6. Add cream and boil sauce till very slightly thickened. 7. When pudding is baked, whilst hot poke with fork randomly all over and pour sauce over.8. Leave to soak for 5min, then cut and serve with ice cream or cold vanilla custard.
