RUHANA EBRAHIM'S RECIPES

INGREDIENTS

Ingredients:
250g Pasta
500g Chicken fillet (cubed)
1 teaspoon Salt
1⁄2 teaspoon Black pepper
2 teaspoon chilli powder
2 bay leaves
1 tablespoon garlic
Juice of 1 lime
1⁄4 cup oil
2 onions (sliced)
Red/green bell pepper (julienned)
4 fresh jalapeno peppers (sliced)
5 large tomatoes (liquidized)
1 sachet tomato paste
1 cup frozen corn
parmesan cheese

METHOD


In a large pan cook the chicken with 1 tablespoon oil, garlic, salt and pepper.
When halfway done, add corn and cook till done.
Remove chicken.
Heat remainder oil and saute onions, bell pepper, bay leaves and jalapeno chillies for 5 minutes.
Then add tomatoes, lime juice, chilli powder and tomato paste. Cook tomatoes down till no liquid remains.
Add in chicken. Mix in.
Boil water for pasta, add some salt in it and add pasta. Boil till al-dente.
When pasta is ready, add it to the sauce. Garnish with parmesan cheese.
