250g Pasta500g Chicken fillet (cubed)1 teaspoon Salt½ teaspoon Black pepper2 teaspoon chilli powder2 bay leaves1 tablespoon garlicJuice of 1 lime¼ cup oil2 onions (sliced)Red/green bell pepper (julienned)4 fresh jalapeno peppers (sliced)5 large tomatoes (liquidized)1 sachet tomato paste1 cup frozen cornparmesan cheese
In a large pan cook the chicken with 1 tablespoon oil, garlic, salt and pepper. When halfway done, add corn and cook till done. Remove chicken. Heat remainder oil and saute onions, bell pepper, bay leaves and jalapeno chillies for 5 minutes. Then add tomatoes, lime juice, chilli powder and tomato paste. Cook tomatoes down till no liquid remains. Add in chicken. Mix in. Boil water for pasta, add some salt in it and add pasta. Boil till al-dente. When pasta is ready, add it to the sauce. Garnish with parmesan cheese.
