¼ lb butter ¾ cup sugar 2 eggs 1 teaspoon Elachi (cardomom) powder or more depending how strong it is 2 cups self rising flour ¾ cup liquid made up of milk & water
Beat together the butter & sugar until light in colour. Add in eggs one @ a time. Mix in flour & beat well. Pour liquid mixture in. Fill cup cake casings & bake @ 180 +- 10 to 12 minutes. Allow to cool. Spread a nice amount of apricot jam & sprinkle coconut over.
Sumi used roasted, colouring & plain coconut. These Cuppies are also very nice without the jam. Elachi (cardomom) cakes are the best.
