Coconut Jam Cuppies

INGREDIENTS



Recipe of my late mum. May Allah grant her & all the marhooms magfirah & the highest stages of jannatul firdose. Aameen

1⁄4 lb butter
3⁄4 cup sugar
2 eggs
1 teaspoon Elachi (cardomom) powder or more depending how strong it is
2 cups self rising flour
3⁄4 cup liquid made up of milk & water


METHOD

Beat together the butter & sugar until light in colour. Add in eggs one @ a time. Mix in flour & beat well.
Pour liquid mixture in. Fill cup cake casings & bake @ 180 +- 10 to 12 minutes. Allow to cool. Spread a nice amount of apricot jam & sprinkle coconut over.


Sumi used roasted, colouring & plain coconut. These Cuppies are also very nice without the jam. Elachi (cardomom) cakes are the best.
