INGREDIENTS
2 tablespoon olive oil1 large onion, sliced1 vine roasting tomatoes, coarsely chopped3 bay leaves1 tablespoon crushed garlic¼ cup lemon juice¼ cup orange juice1 tablespoon orange zest 1 teaspoon cumin powder½ teaspoon dried oregano½ teaspoon dried thyme ½ teaspoon dried basil1 tablespoon fish spice2 green chillies, slicedblack pepper abd salt to taste1 kg. Hake fillets(Optional- sliced olives)
METHOD
1. Marinate fish with all ingredients.
2. Place in oven proof dish. Spread over onions, tomatoes and olives.
3. Drizzle over oil.
4. Bake in preheated oven of 180 deg C (20-30min) until fish flakes easily and veg has roasted.
5. Serve with croutons.
