INGREDIENTS 2 tablespoon olive oil 1 large onion, sliced 1 vine roasting tomatoes, coarsely chopped 3 bay leaves 1 tablespoon crushed garlic ¼ cup lemon juice ¼ cup orange juice 1 tablespoon orange zest 1 teaspoon cumin powder ½ teaspoon dried oregano ½ teaspoon dried thyme ½ teaspoon dried basil 1 tablespoon fish spice 2 green chillies, sliced black pepper abd salt to taste 1 kg. Hake fillets (Optional- sliced olives)
1. Marinate fish with all ingredients. 2. Place in oven proof dish. Spread over onions, tomatoes and olives. 3. Drizzle over oil. 4. Bake in preheated oven of 180 deg C (20-30min) until fish flakes easily and veg has roasted. 5. Serve with croutons.
