INGREDIENTS

3 eggs 1 cup granulated sugar1 cup oil [ I used ½ cup of oil]1 ½ cups flour3 teaspoon baking powder½ teaspoon bicarbPinch salt2 teaspoon cinnamon2 cups grated carrots¾ c pecan / walnuts¼ cup water [I used hot water]

METHOD

Beat eggs and sugar until light and fluffyAdd in oil and beat againAdd in sifted dry ingredients...Fold in carrots and nutsAdd water and mix
Bake until done....For a cake bake for 35-40 minutes
